DESSERT RECIPES THAT PAIR WITH LONG TROUT CHOCOLATE WINES:
"FOREVER STRAWBERRY FIELDS" SAND TARTS
(PAIRED WITH INSTANT "O" - STRAWBERRY CHOCOLATE WINE)
INGREDIENTS
- 2 STICKS SALTED BUTTER (room temperature)
- 1/2 CUP CONFECTIONER'S SUGAR
- 1-1/2 TSP. VANILLA EXTRACT
- 1-3/4 CUPS FLOUR
- 1/4 CUP STRAWBERRY QUICK
- 3 HEAPING TBSP. SUGAR FREE STRAWBERRY PRESERVES
DIRECTIONS
SET OVEN TO 270 degrees F
LIGHTLY GREASE COOKIE SHEETS OR COVER WITH PARCHMENT PAPER;
COMBINE BUTTER & SUGAR ON LOW SPEED & ADD IN VANILLA EXTRACT;
INCORPORATE FLOUR - 1/3 AT A TIME & STRAWBERRY QUICK, SLOWLY;
USING SPATULA, FOLD IN STRAWBERRY PRESERVES;
REFRIGERATE DOUGH FOR 15 MINUTES,
THEN USING FLOURED BOARD & ROLLER, ROLL DOUGH OUT TO 1/4" THICKNESS;
CUT OUT COOKIES & SPACE APART ON PREPARED COOKIE SHEETS;
BAKE FOR 38 MINUTES, PLACE ON WIRE RACKS TO COOL
(LIGHTLY DUST WITH CONFECTIONER'S SUGAR WHILE THEY ARE HOT)
CHOCOLATE ORANGE EXPRESSO BROWNIE
(PAIRED WITH HEAVY BREATHER - ORANGE CHOCOLATE WINE)
INGREDIENTS
- BOX BROWNIE MIX, RECOMMENDED - ONE WITH CHOCOLATE CHUNKS OR JUST ADD YOUR OWN
- 1 TSP. ORANGE EXTRACT
- 1 TSP. ORANGE ZEST
- 1 PACKET INSTANT COFFEE
- 1/2 CUP CRUSHED CHOCOLATE COVERED EXPRESSO BEANS (We Recommend Calversi brand)
TOPPING
- 12 OZ. READY-MADE CREAM CHEESE FROSTING
- 1 PACKET INSTANT COFFEE
- 1 OZ. CHOCOLATE EXPRESSO LIQUOR
DIRECTIONS
SET OVEN TO 350 degrees F
PREPARE BOX MIX PER INSTRUCTIONS (Cake Style);
ADD 1/8 TSP. MELTED BUTTER;
LIGHTLY GREASE 9X12 PAN;
FOLD-IN REMAINING INGREDIENTS LISTED ABOVE;
BAKE FOR 28-31 MINUTES;
LET COOL AND PREPARE TOPPING BY COMBINING INGREDIENTS ABOVE
WHITE CHOCOLATE BROWNIE WITH BLACK RASPBERRY WINE REDUCTION SAUCE
(PAIRED WITH BERRIED IN CHOCOLATE WINE)
INGREDIENTS
- 3/4 CUP SOFTENED BUTTER
- 4 OZ. BAKER'S WHITE CHOCOLATE (RESERVE 2 OZ. FOR TOPPING)
- 3 EGGS
- 1/4 CUP GRANULATED SUGAR
- 2 TSP. VANILLA EXTRACT
- 1 1/2 CUP FLOUR
- 3 TSP. CHOCOLATE RASPBERRY INSTANT CAPPUCCINO MIX
(We Recommend Sonia Lee's brand.)
- 1 TSP. BAKING POWDER
- 1/4 TSP. SALT
WASKULLY BLACK RASPBERRY WINE REDUCTION SAUCE
- 1/2 BOTTLE LONG TROUT WASKULLY BLACK RASPBERRY WINE
- 1 TSP. ORANGE ZEST
- 1/2 BAG FROZEN RASPBERRIES (THAWED & SMASHED)
- JUICE OF HALF LEMON
- 1/4 CUP GRANULATED SUGAR
- 1/2 CUP CONFECTIONER'S SUGAR
DIRECTIONS
SET OVEN TO 350 degrees F
IN 3 QT. SAUCEPAN COMBINE BUTTER, CHOCOLATE & EGGS (One at a time),
ADD ALL REMAINING DRY INGREDIENTS;
POUR INTO GREASED 9X12 PAN AND BAKE FOR 30 MINUTES,
REMOVE FROM OVEN & COOL ON RACK;
REDUCTION SAUCE:
ADD ALL INGREDIENTS EXCEPT THE CONFECTIONER'S SUGAR
AND BOIL/REDUCE BY HALF;
WHISK FREQUENTLY, WHEN REDUCED BY HALF WHISK IN THE CONFECTIONER'S SUGAR
AND SPREAD ON TOP OF COOLED BROWNIES -
DRIZZLE 2 OZ. OF MELTED BAKER'S WHITE CHOCOLATE ON TOP OF WINE REDUCTION SAUCE
